90% Corinto Nero 90% and 10% Nero d’Avola. Organic. From the tiny volcanic island of Lipari off the north coast of Sicily. Grapes are hand-harvested. The de-stemmed grapes are fermented using the yeasts naturally present on the grapes, with a long maceration of the wine with the skins. After devatting, the wine is decanted to barrels for the malolactic fermentation. About a year later, it is transferred into a steel tank. No clarification is done, just static decanting before the bottling. Deep red-ruby color. Inky plum, blackcurrant and savory spices are complicated by minerals and fresh flowers on the nose. Medium-bodied. Silky, juicy and deep, conveying a restrained sweetness and outstanding finesse to its apple, plum and mineral flavors. Finishes with fine-grained tannins and repeating notes of minerals and herbs.
This wine is similar in weight and texture to the famous Etna Rossos of nearby Sicily. Pair is as you would one of these or a Nebbiolo-based wine, with rich dishes such as stews, grilled meats, hearty pastas or lasagna.
